
How to: Pineapple Salsa!

The sun is slowly emerging and BBQ season is fast approaching...finally! It's time to start looking at the flavours of Summer 2022, so we're kicking it off with a deliciously fresh recipe to accompany your grilled masterpieces.
Pineapple Salsa is a bowl of fresh, juicy, tangy goodness that pairs perfectly with fresh food such as tacos! (Well, that's what I made it with). Because we love you, we're sharing the super simple recipe...you're welcome!
Ingredients:
- Approx. 400g Pineapple (duh. Fresh is best but canned will also work! The sweeter the better)
- 1/2 Red Onion
-1 Sweet Red Bell pepper
-A handful of Coriander (Add more for an even fresher taste)

Recipe:
- Dice your pepper, onion and pineapple into small chunks. Dice your coriander up finely.
- This next step is pretty tricky so pay attention...mix the ingredients together! You can also add a little pineapple juice if you're using canned pineapple to help bind it together.
- Garnish with some whole coriander leaves, and you've got yourself a deliciously fresh salsa to indulge in.

I paired with homemade guacamole, soured cream, prawns and diced spring onion on a tortilla! Delicious!
